Egg sandwiches by Huey

CELEBRITY TV chef and author Iain "Huey" Hewitson shares his simple and delicious Mother's Day brekkie recipe - fried egg sandwiches.

Fried egg sandwich

Ingredients (serves 4):

4 thick slices country-style bread

vegetable oil

a knob of butter

4 large eggs

freshly ground salt & pepper

tomato ketchup

Instructions:

Cut holes in middle of the bread with a pastry cutter.

Put a thin layer of oil in a large non-stick pan, add the butter and gently cook the bread on one side until golden.

Then turn the bread over, carefully break an egg into each hole, season and gently cook until the egg is just set.

Serve with a good dollop of ketchup and bacon or sausages if you like.

Note: Use a heart shaped cutter for something special.
