ROCKHAMPTON'S Ashley Knight has a degree in human movement science.

It's clear the 28-year-old sandwich-making extraordinaire certainly knows a thing or two about speed and movement.

Ashley was crowned the Australian and NZ Subway making champion at the company's national conference in Sydney on the weekend.

He's arguably the fastest sandwich maker in this part of the world and soon he'll be off to Orlando in the United States to compete for the Subway world crown.

Ashley is a co-owner of the two North Rockhampton stores, on Blanchard St and in the Glenmore Shopping Village.

Having finished third at the Australian titles a couple of years ago Ashley adopted a new strategy this time around.

The foot-long ham subs have to be made to a specified formula and there are penalties in place for each gram contestants are off the mark.

For example, each sub needs 42 grams of lettuce and 18 of onion with entrants penalised one second for each gram they are out.

A three-second penalty is in place for missing tomato slices.

"Last time I went really quick and made the sandwich in 38 seconds," Ashley said.

"This time I went a bit slower but I was more careful and, once they took into account the penalties, I won."

His winning time, with penalties included, was 61 seconds.

Ashley has made plenty of subs over the years but these days spends much of his time managing between the two sites.

He said business was going well.

The Blanchard St store makes an average 1500 subs a week and last year was recognised as the franchise's top national store.

Ashley said this represented a focus on customer service.
